One of the dishes I have in our semi regular rotation is fish tacos. My family loves these and they taste amazing, in my opinion.

I don’t follow a recipe, I just use the ingredients that, I believe, make up for a really good fish taco.

My fish tacos include cabbage, cilantro, tomato, jalapeno, avocado and lime.  Typically I use cheese as well, but this time I didn’t have any.  I also dry fry the corn tortilla to give them a crunch without all the fat from frying in oil.  For the fish I use either Tilapia or Cat Fish, whichever is available and hopefully on sale.

We top off our tacos with either Franks Red Hot sauce or if we have Mrs Renfros salsa on hand, a great salsa that I just recently discovered in the past year thanks to some friends of ours from church.

Last night I made salmon, brown rice and creamed spinach.  All pretty yummy and more than likely all things I won’t put into my regular rotation.  Salmon is expensive and my kids gag on creamed spinach.  They’re not real fond of salmon either.  I made them eat it anyway.  And yes, they washed it down with an Oreo.  I’m not all that bad…

As you can see my creamed spinach is a bit brown and not so creamy looking.  I cut down the recipe by 75% as I didn’t have 24 ozs of spinach.

So far 2012 finds me rested.  After years of design team work, years of dead lines, years of hopes dashed to nothing, years of submitting and years of scrapping for others I’m taking a break.  A much needed hiatus.  I’ve loved every team I’ve ever been on and am honored to have been chosen over the years to be a part of some amazing teams.  I’ve met wonderful people, have great memories, terrific times at CHA, and lots of laughs and encouragement.  But it’s time to be done…..for now.  How long?  As far as design team commitments maybe the rest of my life.  As far as scapping for myself, hopefully not too long.  I’m just tired.  That’s all.  I have so much product to use from years past, usable, super cute product.  I don’t think I’ll ever have a need to buy again.  I say that now….hehe!

So what am I going to do now as far as this blog goes?  Be random I guess.  There is no particular rhyme or reason to what I’ll post.  No “every Tuesday I’ll post about this” sort of thing.  But what I do know is that I want to share my love of food, my love of  cooking.

Right now you may be thinking “great another food blog” and to you I’d say I agree!  The market is over saturated with all kinds of cooking blogs, from the general to the specific.  I can assure you this is just me sharing my attempts to feed my family variety of different foods and be healthy.  The dishes I make will not have original recipes.  I’ll always link you to the original post of where I found it.  I’ll let you know if my family loved it, if I’ll make it again and whether it’s worth putting into my regular rotation or if it’s just a one time deal.  My posts more than likely won’t have amazing photos accompanying each recipe, but that might change too as I continue to learn my camera more this year.

So we’ll see how this goes.  In the mean time let me show you what I made for my family on New Years Eve

I’ve had some of my projects showcased on Pretty Little Studio blog the past couple of weeks.  So fun and I want to share them here too!  If you haven’t seen the products that Pretty Little Studio comes out with, well, you must!  They are amazing, cute and right up my style alley!

First off is this layout titled “Barely Holding It Together”  I love this layout.  I love the story behind this layout.  My sweet daughter was struggling to hold it together while saying good bye to her best friend.  We live in Colorado, she lives in California so when we have the chance to get together they are sweet.  But with the fun comes such pain.

This one sort of came to me after the fact.  I loved the papers and accents and how everything flowed together but truly it was the title that came at the end.  I kept on looking at the photos and asking myself what they were saying to me.  And then wham-o it hit me.

In a moment of complete transparency this next one is not my favorite.  I don’t know, something just isn’t clicking with me.  Maybe it’s the too stark white background.  I should have gone with a colored cardstock.  Ah well, can’t hit em out of the park every time.

Here’s my take.  I turned the layout on it’s side to give me the use of a portrait rather than landscape photo.

I used a combo of a couple of different older Pink Paislee lines because, well, why not?!?!  I thought they went together really well.  I also utilized the amazing 6×6 paper pads.  I love that it gives me the same fun patterns but on a scaled down version.  It doesn’t overwhelm the picture of my gorgeous daughter.

It’s hard to tell but I used Studio Calico Warm Mr. Huey on my kraft cardstock but it really is there.

I also grabbed some older Pink Paislee Artisan tapes.  I L-O-V-E tapes!  Decorated, fabric, canvas, clear…whatever I love em and wish I had more!

And look…fun old Prima!  Who says you can’t use up your older products?!?!  Not me!

A few drops of Helmar 450 Quick Dry on my ribbon allowed me to do a fun pleated accent rather than just keeping it flat.  Flat ribbon is fine but I love dimension hehehehehe
