Not everything I make for dinner is a new creation, although I try and make at least one new recipe a week. Sometimes it’s really hard to find new recipes that are healthy, look tasty, won’t break the budget and use ingredients that are readily available.
One of the dishes I have in our semi regular rotation is fish tacos. My family loves these and they taste amazing, in my opinion.
I don’t follow a recipe, I just use the ingredients that, I believe, make up for a really good fish taco.
My fish tacos include cabbage, cilantro, tomato, jalapeno, avocado and lime. Typically I use cheese as well, but this time I didn’t have any. I also dry fry the corn tortilla to give them a crunch without all the fat from frying in oil. For the fish I use either Tilapia or Cat Fish, whichever is available and hopefully on sale.
We top off our tacos with either Franks Red Hot sauce or if we have Mrs Renfros salsa on hand, a great salsa that I just recently discovered in the past year thanks to some friends of ours from church.
