Sticking With An Old Favorite January 7, 2012

Not everything I make for dinner is a new creation, although I try and make at least one new recipe a week.  Sometimes it’s really hard to find new recipes that are healthy, look tasty, won’t break the budget and use ingredients that are readily available.

One of the dishes I have in our semi regular rotation is fish tacos. My family loves these and they taste amazing, in my opinion.

I don’t follow a recipe, I just use the ingredients that, I believe, make up for a really good fish taco.

My fish tacos include cabbage, cilantro, tomato, jalapeno, avocado and lime.  Typically I use cheese as well, but this time I didn’t have any.  I also dry fry the corn tortilla to give them a crunch without all the fat from frying in oil.  For the fish I use either Tilapia or Cat Fish, whichever is available and hopefully on sale.

We top off our tacos with either Franks Red Hot sauce or if we have Mrs Renfros salsa on hand, a great salsa that I just recently discovered in the past year thanks to some friends of ours from church.

What’s For Dinner? January 4, 2012

Uhhh….food!  Sometimes that’s the answer I give to my kids because I know they’re not going to love dinner.  As was the case last night.  But I don’t always cook with them in mind.  In fact I try and cook more for my husband and his needs.  His chronic pain necessitates certain dietary needs.  Like fish and vegetables.  Too bad we can’t afford fish.  Have you seen how much per pound it is?  Oiy!

Last night I made salmon, brown rice and creamed spinach.  All pretty yummy and more than likely all things I won’t put into my regular rotation.  Salmon is expensive and my kids gag on creamed spinach.  They’re not real fond of salmon either.  I made them eat it anyway.  And yes, they washed it down with an Oreo.  I’m not all that bad…

 

 

As you can see my creamed spinach is a bit brown and not so creamy looking.  I cut down the recipe by 75% as I didn’t have 24 ozs of spinach.

An Adventure In Food January 3, 2012

Welcome to 2012 you poor little neglected blog you, and you poor neglected little readers.

So far 2012 finds me rested.  After years of design team work, years of dead lines, years of hopes dashed to nothing, years of submitting and years of scrapping for others I’m taking a break.  A much needed hiatus.  I’ve loved every team I’ve ever been on and am honored to have been chosen over the years to be a part of some amazing teams.  I’ve met wonderful people, have great memories, terrific times at CHA, and lots of laughs and encouragement.  But it’s time to be done…..for now.  How long?  As far as design team commitments maybe the rest of my life.  As far as scapping for myself, hopefully not too long.  I’m just tired.  That’s all.  I have so much product to use from years past, usable, super cute product.  I don’t think I’ll ever have a need to buy again.  I say that now….hehe!

 

So what am I going to do now as far as this blog goes?  Be random I guess.  There is no particular rhyme or reason to what I’ll post.  No “every Tuesday I’ll post about this” sort of thing.  But what I do know is that I want to share my love of food, my love of  cooking.

 

Right now you may be thinking “great another food blog” and to you I’d say I agree!  The market is over saturated with all kinds of cooking blogs, from the general to the specific.  I can assure you this is just me sharing my attempts to feed my family variety of different foods and be healthy.  The dishes I make will not have original recipes.  I’ll always link you to the original post of where I found it.  I’ll let you know if my family loved it, if I’ll make it again and whether it’s worth putting into my regular rotation or if it’s just a one time deal.  My posts more than likely won’t have amazing photos accompanying each recipe, but that might change too as I continue to learn my camera more this year.

So we’ll see how this goes.  In the mean time let me show you what I made for my family on New Years Eve

I Have Brain Cells!!! September 6, 2011

Seriously!  This has been such a huge transition the past couple of weeks.  With back to school and back to work and back to schedule I’ve been adjusting and it’s been hard!  I’ve been fighting a cold/soar throat for the past couple of weeks, getting up earlier in the morning then I have in a very long time and turning a year older.  If I could make it to 9:00 at night I felt that I was accomplishing something monumental! What can I say.

Here is a recent project that has been uploaded at the Pretty Little Studios blog.  I’ll be showing more in the next day or two but for now I leave you with this one.  Don’t ya love his face?!?!?
